The powerful Montalcino Riserva is the refined quality wine produced by the Ferrero winery from the Sangiovese grapes. Known locally as Brunello the grapes are collected manually and after careful selection the superior quality branches undergo fermentation in two short and wide stainless steel tanks of 80 hl. Staying in contact with the skin, must is fermented for 20 days at a controlled temperature of below 28 degree Celsius.
After optimum color and perfume assimilation, the last 10% of the wine is drained from the skins when separating after fermentation. The fermented liquor is first aged for three years in three old barriques of six to seven years of age. The refined wine then earns its vintage quality by undergoing further aging staying bottled for another three years in temperature controlled room.
The remarkable Riserva made from the Brunello grapes is the prized product of Tuscany regions. The vineyards of Ferrero winery is situated 250 meters above sea level in the hilly lands of Montalcino of Sant’Angelo in Colle. This vintage wine made from Sangiovese grapes are grown on the clayey soil of low fertility and harvested generally during early October.
The polished tannins of this wine is ideally served at 18 degree Celsius in wide glasses and goes beautifully with veal, pork, game (deer, venison), rich fishes (salmon, tuna), and poultry.
