Made from Falanghina grapes the Via Del Campo Irpinia DOC is a loving creation offered by the Quintodecimo cellar. After being manually collected into the boxes of 15 kg capacity the grapes are long pressed and the pressed must is clarified by natural settling. After separating the free-run must from long-pressed must, utmost care is given to keeping it from being exposed to oxygen.
Must is fermented in two separate ways, 70% of it is done in stainless steel tanks and 30% of it is done in new oak barrels for some days. The fermented liquors are then aged on fine lees for eight months being periodically suspended.
The Falanghina grapes, necessary to produce sublime quality refreshment Irpinia DOC, are grown on the clay-calcareous soil of Campania region. The vineyards of Quinto Decimo cellar are situated at 360 meters of altitude in the production area of Mirabella Eclano facing a west side exposure. The Guyot training system of the vineyard produces 1.8 kg/vine during the harvesting period that starts from end of September to the first ten days of October.
This still white wine is ideally served at 10 to 12 degree centigrade and forms harmonious pairing with seafood appetizers, creamy seafood pastas, and chicken dishes.
