Mouth: The warmth of this flavorsome wine is evident through its spicy sharpness that leaves a persistent aftertaste with brisk acidity and is balanced greatly by the presence of silky tannins.
The purity of the Canaiolo grapes is necessary for the making of this endearing silky IGT wine in the cellar of Castello della Paneretta. The grapes are autochthonous to the Chianti area of Tuscany region. The fruits are collected manually in the boxes of 20 kilos after ripening. Before being pressed these fruits undergo careful selection on the sorting table. The fermentation takes place in stainless steel vats for a period of five days at controlled temperatures. In order to enrich the fermented liquor with smooth and velvety features, the wine is aged for two years into new barriques. After being filled with properly mature wine, the bottles are numbered manually before being marketed.
The purity of this IGT wine with silky tannins has been acquired from the Canaiolo grapes, grown in the vineyards of Castello della Paneretta of Chianti. The vineyards of this estate are located between the villages known as Barberino and Castellina, on the western slopes of Elsa valley, in the Tuscany region. The soil of the vineyards has the base of limestone and clay with varying qualities (from lightly eroded to well-preserved) and colors (from purple to red and pale gray). Because of this stony feature, the soil of all the vineyards has excellent water drainage capacity. The manual harvesting starts at the end of the second week of September and only the black variety of these grapes are selected from the four hectares of the vineyard that is used specifically for this variant.
The sprightliness of this wine can be paired flawlessly with rare steaks, roasted game birds or wild boars, rich chicken recipes, mushroom dishes, or anything with tomato or cream sauces and should be served at ideal temperatures of 18 to 19 degree Celsius.
