The purity and richness of Nerello Mascalese IGT is offered by the cellar Ottoventi of Sicily. These autochthonous grapes are collected manually at the beginning of October. After harvesting, only the fully mature and healthy red berries pass through the rigorous selection. The primary alcoholic fermentation happens in steel tanks at the controlled temperature of 25 degree Celsius. It is followed by the malolactic fermentation with natural yeasts for a few days that fills this red wine with its unique buttery fullness. The fermented liquor is aged in new French oak barriques for 16 months. After this period, the wine undergoes further aging for 18 months while in bottles to achieve more mellowness.
The red Nerello Mascalese grapes are grown in Valderice vineyard that is owned by Ottoventi cellar and are autochthonous to the Sicily region that the vineyard is located in. It rests at an altitude of 280 meters and enjoys the presence of mixed soils. With the harvesting period being 10 days at the beginning of October, the vineyard gifts the wine producers a yield of about 4000 kg per hectare every year.
The velvety tannic and fruity features of this red Sicilian wine is best paired with braised lamb, duck, stews, pasta, hard cheese, Mediterranean cuisine, and pecorino. It is ideally served at temperatures of 16 to 18 degree Celsius.
