The full-body IGT wine Barbabecchi is an elegant creation in the form of red liquid brought forth by the cellar known as Graci. The Nerello Mascalese (97%) and Nerello Cappuccio (3%) grapes that are used to make this sublime wine are grown in the high-altitude grounds of Sicily.
After manual collection of the fruits, the gently pressed must undergoes maceration in conical oak vats for 25 days without any use of selected yeast. The temperature is not controlled during this period and the skin is left in contact with the must to maximize the color and aromatic contribution to the liquid.
Fermented liquids are then transferred into oak barriques to undergo spontaneous malolactic fermentation for 24 months.
The perfectly aged wine is then bottled and held for another one year to let it develop more maturity before it is placed on market for sale.
The Quota 1000 IGT is a full-body red wine that is a magnificent creation from the vineyards of high-altitude situated in the panoramic region of Sicily. This barrique wine is a perfect blend of Nerello Mascalese and Nerello Cappuccio grapes that are grown on brown, volcanic stony, sandy, non-calcareous soil of neutral pH, enriched with high presence of iron and nitrogen. The vineyard that is placed on the north-east side of Etna at an altitude of 1000 meters yields a production of 10 quintals per hectare at the first week of November.
This absolutely fantastic wine is justly served with roast meat, game and cheese at an ideal temperature of 10 to 12 degree Celsius.
