The pure expression of Nerello Mascalese grapes found in Etna Rosso DOC is a supremacy delivered by Graci winery from the picturesque region of Sicily. After manual collection of the grapes, the softly pressed must undergoes maceration in conical oak vats while in contact with the skins for 30 to 90 days with no addition of selected yeast. The prolonged maceration period ensures maximum extraction of color and aromatic compounds.
The fermented liquor then witnesses spontaneous malolactic fermentation in large oak vats for 24 months.
After the amazing liquor has earned its maturity it is bottled and kept for at least six months before it is released on the market.
The dark skinned Nerello Mascalese grapes used to create amazing and well-structured Etna Rosso DOC are grown in the Sicily region. The vineyards are situated at Passopisciaro, on the northeastern slopes of Etna at an altitude of 600 to 700 meters, in the Province of Catania. The grapes are grown on the dark brown, volcanic stony, almost sandy, non-calcareous, pH-neutral and well-drained soil of the town Castiglione di Sicilia that is rich in iron and nitrogen. The harvesting happens at the last week of October with a total yield of about 40 quintals per hector.
The elegance of this Arcuria wine goes best with roast meat, game and cheese when served at an ideal temperature of 16 to 18 degree Celsius.
