This regal golden liquid from the farm of Lo Sparviere is pressed from 100% Chardonnay grapes. The grapes are gently pressed in whole-cluster and approximately 60% free-run must is collected with lower pH level and lighter acidity.
Using “cold settling” technique the grape must is kept for 24 to 36 hours at 10 degree Celsius in a vat extracting strong flavor from it. The fermentation begins at 16 degree Celsius with skins in contact. The fermented liquor then undergoes maturation with the lees in steel vats for six months.
Only a selected portion of the wine then undergoes malolactic fermentation into oak barrels.
The perfect blend of Sparviere Franciacorta Brut Millesimato is then stored in bottles with lees in contact to let it age for another four years adding more depth and complexity to the wine with a toasty hazelnut quality.
The grapes are harvested early between the end of August and the first of September to maintain the sparkle and light acidity. The supreme Chardonnay grapes are from the Lombardy region. These light skinned grapes are grown on the reddish silted clay soil of Provaglio d’Iseo on a south-facing hillside at the height of 180 meters with a total yield of about 80 quintals per hectare.
IDEAL SERVING TEMPERATURE: This bubbly wine is served slightly cold at 9 to 10 degree Celsius.
Generally served at 8 degree Celsius as an aperitif wine or throughout the meal, this gentle yet crispy wine pairs seamlessly with first courses like baked pastas and very creamy risottos; outstanding with raw seafood.
