Made entirely from the Aglianico grapes the Irpinia DOC is a passionate creation of Quintodecimo cellar. Having been collected from five different vineyards the grapes are stored in small boxes and undergo manual selection on sorting table before destemming. Separate vinification is followed for each parcel.
The dark skinned fruits are macerated for 21 to 30 days with skins and seeds staying attached to the juice for maximum release of color and aromatic compounds. Fermentation happens at the same time in stainless steel vats at 26 to 30 degree Celsius. The fermented liquor then stays in oak barrels for 18 months to undergo malolactic fermentation. At the completion of this period, to reach its supremacy, the wine is aged further staying bottled for six months, before it is put on the market for sale.
Made from Aglianico grapes the Irpinia DOC of Quintodecimo winery is a prized possession of the region Campania. The grapes are grown on clayey soil with other tuffaceous densities from five different vineyards that are situated at 420 to 460 meters above sea level. The vineyards face south-east, south-west, and north-west. With the harvesting period being second to third week of October the total yield has been 1 kg per vine.
This full-bodied wine is ideally served at 18 to 20 degree Celsius and goes beautifully with game meats, red meats, and mature cheese.
