Different type of effervescence for quality sparkling wines
Nowadays italian sparkling and semi-sparkling wines are produced in two different ways: the Charmant Method (the most used in Italy) and the Classic Method (basicly used in Lombardy and Trentino Alto Adige and borrowed from the french Champagne wine region). In the Charmant Method the fermentation takes place in a large pressurised steel container called autoclave; the carbonation is endogenous and comes from the decomposition of the grape sugar, preserving natural fragrances of the grapes. In the Classic Method (or Traditional Method) the effervescence is given using lees for a second fermentation in bottle; after that, winemakers separate the lees before from wine through “sboccatura” (disgorging) process, and then place wine in his final bottle.
