The luscious Etna Rosato DOC is a magnificence offered by the Graci cellar. The exquisiteness of this Sicilian rose wine is acquired from the richness of Nerello Mascalese grapes.The yield is manually collected at the last week of October and witness de-stemming and slow vertical hydraulic pressing.
Fermentation happens in cement tanks without any maceration and malolactic fermentation. The fermented liquid is aged by staying in contact with lees for six months.
Upon the completion of this period the wine gets clarified and the filtered refreshment achieves further refinement by staying inside the bottles for another month before release.
The Nerello Mascalese grapes that are responsible for the creation of Etna Rosato DOC, the superior-quality Sicilian rose-wine, are grown in the Arcuria district of Passopisciaro town. The Contrada Arcuria vineyard is located on the northern slopes of Mt. Etna at 600 meters above sea level, in the region of Sicily. The fruits are grown on the auburn-colored sandy and non-calcareous soil that has neutral pH and is very rich in iron and nitrogenous elements. The harvesting time for this fruit is early October.
The richness of this Rosato is well complemented by the dishes of rabbit, pork and chicken and is best served a little chilled at 10 to 15 degree Celsius.
